Rice Casserole

Here's what it looks like (below). You cook 2 cups dry rice (make sure it's salted). Set it aside and sauté a diced yellow onion in 1/2-1 stick (4-8 tbls) butter. Then add the rice to the saute off the burner, stir in 16 ounces sour cream, 16 ounces cottage cheese and pepper to taste. Mix it well and layer it with medium cheddar cheese and Hatch whole green chiles. (2 layers with the top being the second layer). Don't put the cheese on the top layer yet. Bake it for 350 for 45 minutes. Then take it out and add the last cheese layer until it melts. YUM. I also like sliced tomatoes as the side.
