The weekend has started off great so far! My son tested out the smoker with 2 chickens and oh my gosh it turned out to be the best smoked chicken of my LIFE (and I live in Texas).
He was so worried because it looks burnt when you see the color but that's just the seasoning color as it smokes. Not burned at all. It was juicy and flavorful. He soaked it in a buttermilk salt brine all night then seasoned it and basted it with butter too.
I made twice baked potatoes to go with it and packaged up the second chicken for my oldest who is coming to visit
tomorrow.
