Tuscan Bean Soup Recipe And Instructions
Here is the ingredients list for the Tuscan bean soup (and I added a small
crown of broccoli chopped up for my liver health):
2 tablespoons oil from jarred oil-packed sun-dried tomatoes (or olive oil)
1 small red onion, chopped
3 garlic cloves, finely chopped
1 pint (about 1½ cups) cherry or grape tomatoes, halved
Kosher salt and freshly ground black pepper
1 (12 oz.) jar
marinated artichoke hearts, drained
½ cup chopped oil-packed sun-dried tomatoes, drained
1 tablespoon finely chopped fresh rosemary
6 chopped fresh basil leaves
2 (15 oz.) cans cannellini (white kidney) beans, drained and rinsed
½ cup vegetable broth, chicken broth, or water
½ teaspoon Calabrian chile paste, or ¼ teaspoon crushed red
pepper flakes
3 cups packed baby spinach
2 tablespoons fresh lemon juice
Freshly grated Parmigiano-Reggiano cheese (I'm using mozzarella because I don't like Parm)
Here are the instructions:
Heat the oil in a large skillet over medium heat. Add the onion
and garlic and cook, stirring occasionally, until softened, about 3 minutes. Stir in the cherry tomatoes and season with salt and pepper. Cook, stirring often, until the tomatoes begin to collapse, about 5 minutes.
Stir in the artichoke hearts, sun-dried tomatoes, rosemary, and basil. Add the beans, broth, and chile paste (or red pepper flakes). Bring to a simmer. Reduce heat to low; cover and simmer until beginning to thicken, about
10 minutes.
Uncover; stir in the spinach. Cook, stirring occasionally, until spinach wilts, about 2 minutes. Stir in the lemon juice. Season with salt and pepper.
Serve hot in bowls. Add cheese upon serving!
